Chicken Cranberry Pecan Salad I raided the pantry to liven up leftover chicken and turned it into this outrageously delicious chicken cranberry salad recipe. Of course, this Chicken Cranberry Salad includes some of my favorite ingredients and gives the recipe great flavor and texture. Servings2 (1 cup) servings Ingredients 1cup cooked skinless chicken breast chunks 2tablespoons coarsely chopped pecanstoasted 1/2cup chopped green apple 3tablespoons dried cranberries 2tablespoons chopped red onion 3tablespoons greek nonfat plain yogurt 2teaspoons light mayonnaise 1tablespoon apple cider vinegar 1teaspoon dried thyme leaves salt and pepper to taste Instructions In large bowl, combine chicken, pecans, apple, cranberries and onion.
 In small bowl, mix together yogurt, mayonnaise, vinegar, and thyme. Toss with chicken mixture. Season to taste. Refrigerate at least an hour, or time permitted. Recipe Notes
